300 g potatoes
300 g sweet potato
4 tablespoons olive oil
0.5 red onion
5 cm leeks
A bunch of fresh basil
2 carrots
1 teaspoon salt
1 teaspoon black pepper

A perfect opportunity to clean the fridge of items left over from other dishes. Toss together what is found at home and roast in the oven for 20-30 minutes. This recipe follows what was at home and became a nice dish that would go especially well on a hot summer day.

Set the oven at 200 degrees.
1. Cut potatoes, sweet potatoes and carrots into cubes. Chop red onion and leek. Mix everything together in an oven plate.
2. Pour over olive oil, salt and pepper and mix together.
Roast in the oven for about 30 minutes or until the potatoes have a little color. Sprinkle with some fresh basil.
Can be served with, for example, a piece of fried or grilled chicken or halloumi.
