300 g potatoes  ​

300 g sweet potato

4 tablespoons olive oil  ​

0.5 red onion

5 cm leeks

A bunch of fresh basil

2 carrots

1 teaspoon salt

1 teaspoon black pepper  

Oven-roasted root vegetables

A perfect opportunity to clean the fridge of items left over from other dishes. Toss together what is found at home and roast in the oven for 20-30 minutes. This recipe follows what was at home and became a nice dish that would go especially well on a hot summer day.

Time: 35 minutes   |   4 servings

Do this

Set the oven at 200 degrees.

1. Cut potatoes, sweet potatoes and carrots into cubes. Chop red onion and leek. Mix everything together in an oven plate. ​

2. Pour over olive oil, salt and pepper and mix together.

Roast in the oven for about 30 minutes or until the potatoes have a little color. Sprinkle with some fresh basil.

Can be served with, for example, a piece of fried or grilled chicken or halloumi.
